Bacon Wrapped Dates with Goat Cheese

As promised, I am posting the recipes from our Sweetheart Dinner last week.  Dinner began with three delicious appetizers; the Bacon Wrapped Dates with Herbed Goat Cheese were scrumptious.  Savory herbs blended into tangy goat cheese, stuffed inside sweet dates, and wrapped with bacon for a uniquely sweet, savory, smoky appetizer.  Applewood-smoked bacon from our local, natural butcher wrapped up these little jewels perfectly; the goat cheese was a great finish.

Dates soften as they cook, so it is important to get the bacon crispy for a complementary texture.  They are quite rich, so plan a serving size of just 2-3 per person.  Substitute any favorite herbs to suit personal preference or to save purchasing something you don’t ordinarily use for such a small amount (though trying new things is always fun).  Simple, elegant, and satisfying, these gems are a great choice for holidays and parties.

Bacon Wrapped Dates with
Herbed Goat Cheese

Serves: 4-6
12       large  Medjool dates
6         slices  bacon
4-5    tablespoons  goat cheese — softened
1/2    teaspoon  fresh parsley — minced
1/4    teaspoon  dried tarragon
1/4    teaspoon  dried oregano
1/8    teaspoon  lemon pepper
1         small clove  garlic — minced

Move oven rack to upper third of oven and preheat oven to 500 °.

Mix the goat cheese with the garlic and herbs. Pit dates by slicing one side with a paring knife and remove pit. Set dates aside.

Halve the slices of bacon to create 1/2 of eat slice for each date.

Open cut side of date slightly and stuff cavity with approximately 1 teaspoon of herbed goat cheese.

Close date and wrap 1 piece of bacon around width of each date; trim excess bacon so it does not overlap.

Insert a toothpick at the seam of the bacon to secure.

Put dates on a baking sheet leaving some space between them. Bake until bacon is golden and crisp. 

Check every few minutes to turn with tongs, as needed, to brown evenly.

Cool briefly before serving.

    Wow I like the flavour combination here sweet and salty, I remember I had tried a prune covered in bacon before and that was lovely, will definitely try this one out.

    I just made bacon wrapped dates stuffed with pecans. It’s something I am requested to make frequently. Simple and so delicious. We must be great minds!!! :)

      The inspiration for this recipe included an almond in the center of the date, but it really didn’t add anything significant for the work involved.
