Salmon season is in full swing in the Northwest and Alaska with renewed optimism among fishing communities. Pricing should reflect the increase in supply, so it is time to think about wild salmon when planning your menus. Blackened, grilled, or broiled, this Dill Sauce for seafood will complement any preparation method. Fish takes only a few minutes to cook, so if you are looking for quick meals, fish with dill sauce should top the list.
Ingredients
- 1 tablespoon olive oil
- 3 tablespoons butter
- 1 small shallot -- finely chopped
- 2 teaspoons garlic -- minced
- 1/2 cup white wine
- 2 teaspoons Dijon mustard
- 2 tablespoons fresh dill -- coarsely chopped (more can be added as desired)
- 1/8 teaspoon black pepper
Instructions
- In a saucepan, over medium heat, heat the oil with the shallot and cook until softened, about 2-3 minutes. Add the garlic and cook until fragrant. Add the wine and cook until reduced by about half, 3-4 minutes. Reduce heat to low and whisk in the mustard, dill, and the pepper.
- Cut the butter into small pieces, whisk into the sauce until incorporated, salt to taste. Spoon the sauce over seafood and garnish with additional dill.

What a great complement for salmon. I love this classic recipe.
I tried adil sauce before but not for seafood, it was a meatball.
Using it in Salmon would be great as it complements each others taste.
