1pintgrape tomatoes(10-12 ounces), halved
1/3cupshallot(2 small) sliced thin
2clovesgarlicsliced thin
2tablespoonsextra-virgin olive oil
1teaspoondry Italian herb blend
1/2teaspoonsea salt
1/2teaspoonfreshly ground black pepper

Instructions
Heat the oven to 400°F. Toss the tomatoes, shallots, and garlic with the oil, dry herbs, the salt, and pepper to coat.
Spread in a single layer on a parchment-lined pan and roast for 20 minutes until the tomatoes are blistered and the shallots are soft and browned in spots. Remove from the oven and cool.
Remove from the oven and cool on the pan for 5-10 minutes if using right away. Otherwise, cool completely and transfer to an airtight container, and cover with additional oil to refrigerate until ready to use.
