Prepare meat, fruit, nuts, and vegetables as indicated; toss gently in a bowl.
Mix the dressing ingredients until well blended.
Add the dressing to the chicken mixture and stir to coat. Serve over a bed of greens or as a sandwich.
Notes
To make ahead:
Mix the dry ingredients, except the nuts, in a bowl.
Mix the dressing in a separate bowl.
Cover and refrigerate for up to 48 hours.
Just before serving, stir the nuts into the dry ingredients and mix with the dressing.
