Crispy prosciutto, herb-infused goat cheese, and shrimp all rolled together into an exquisite appetizer for our Sweetheart Dinner. We enjoyed it so much we think it would be great served with a garden salad for an easy weekday meal. Appetizer or main dish, this recipe is sure to bring out the oohs and aahs in everyone.
Prosciutto Wrapped Shrimp with Goat Cheese
Serves 4 as an appetizer
2 tablespoons coconut oil
12 extra-large shrimp — tail on, peeled and deveined, and butterflied
12 slices prosciutto
8 tablespoons goat cheese — softened
1 teaspoon fresh parsley — minced
1/4 teaspoon dried tarragon
1/4 teaspoon dried oregano
1/4 teaspoon lemon pepper
1 clove garlic — minced
In a mixing bowl, blend the cheese, herbs, lemon pepper, and garlic together. Press approximately 1/2 tablespoon of the filling in the cavity of each butterflied shrimp.
Wrap shrimp tightly with one piece of prosciutto.
In a skillet, heat the coconut oil.
When the oil is hot, add the stuffed shrimp and sear for 3-4 minutes on each side, or until the shrimp turn pink and the prosciutto is crisp.
Remove from skillet and serve immediately.
